The Cabana Club is now open in the former Vic's Restaurant space on St. Anthony Main.
Three hospitality veterans who worked together at Aster Cafe and Jefe Urban Cocina – sommelier Krista Johnson, operations director Jay Viskocil, and chef Charlie Gibbs – are behind the new bar and restaurant at 201 SE Main St., next to Aster Cafe.
Viskocil said Friday during a ribbon cutting at The Cabana Club that he used to stare at the space across from Aster Cafe’s riverfront patio “wishing and wanting” to open something of his own there one day.
The Cabana Club serves globally-inspired dishes including paella arancini, curried cauliflower, green papaya salad, duck confit banh mi, piri-piri shrimp, and jerk chicken. A double smash burger, a charcuterie spread, a Cubano sandwich recommended by Jason DeRusha, and other classic fare are also on the opening food menu.
On the beverage side, specialty cocktails are organized by strength of alcohol content, certain spirits are offered in flights, the wine list is lengthy, and a handful of local beers are on tap.
The Cabana Club will have a 130-seat elevated patio with an unobstructed view of the downtown skyline when the weather warms, according to the Minneapolis/St. Paul Business Journal.
